GF DF salmon pizza

If you love smoked salmon than you’ll love this flavour packed pizza recipe. It’s also super quick to throw together. In fact, I’ve been able to get this prepped and on the table in under 20 minutes!


Ingredients

(Serves 4)

  • 2 medium pizza bases (GFO)

  • 400g of smoked salmon

  • ½ cup of pizza sauce/ passata

  • 2 cups of fresh rocket

  • 1 large red onion, thinly sliced

  • ¾ cup of sundried tomatoes

  • 1-2 zucchini, sliced into ribbons

  • 1 tbsp of extra virgin olive oil

  • 2 tbsp of balsamic glaze (or combine olive oil and balsamic vinegar)

  • 1 tbsp of minced garlic


Method

  1. Preheat oven to 180ºC.

  2. Add pizza bases to the oven heat through and begin to crisp.

  3. Add oil to a pan on a medium-high heat and sauté onion and garlic for 3-4 minutes, or until softened.

  4. Remove pizza bases from the oven and top with sauce and zucchini ribbons and place into the oven for 5 minutes.

  5. Evenly distribute sautéed onion, smoked salmon pieces and sundried tomatoes to pizza base and place back into the oven for a further 5 minutes.

  6. Finally, remove bases from oven, top with fresh rocket and place back into the oven for a final 1-2 minutes, or until lightly wilted.

  7. Remove pizzas from the oven, drizzle with balsamic glaze, slice and enjoy!


notes

  • For a lighter option, you might like to use a gluten free wrap as your pizza base, this also cuts down on cooking time.

  • Feel free to add a cheese of choice if you desire, although this is not necessary.
