festive Rum Balls

My festive rum balls do not last long over the holiday season! If you’re a fan of the classic rum balls, then you must give them a try. While it’s typically warm and sunny here in the Southern Hemisphere on Christmas Day, these delicious bite size treats offer a warming finish to your Christmas lunch or dinner. But let’s face it, there are no rules. They can be enjoyed at any time of day, year-round!


Ingredients

  • 10 medjool dates (pits removed)

  • ½ cup desiccated coconut

  • 1 cup blanched almond meal

  • ½ cup cacao or cocoa powder

  • 4 tbsp rum (or alcohol-free rum essence)

  • 1 tbsp water

  • 2 tbsp coconut oil

  • Extra coconut and cacao powder for rolling (optional)


Method

  1. Add pitted dates to a bowl of warm water to soften (roughly 5 minutes).

  2. Add dates all remaining ingredients to the food processor.

  3. Blend on high until well combined. You may need to intermittently scrape mixture from sides.

  4. Continue to blend until mixture begins to clump together. Add a dash of water or extra coconut if the mixture is too dry or wet.

  5. Once combined, roll into balls and set to one side.

  6. Split the batch in two and roll balls in cacao or coconut powder.

  7. Store in the fridge for up to 2 weeks or freeze for up to 3 months (if they last that long!).

Simply replace rum with alcohol free rum essence for the kiddies!
