Zucchini fritters
Made ahead of time, these zucchini fritters make for a super quick breakfast, lunch or dinner option. With the addition of fresh herbs, these fritters are packed full of flavour and easily customisable.
Ingredients
2 medium zucchini, grated
2 cups of almond meal
4 large free-range eggs
1.5 tbsp minced garlic
1.5 tbsp bone broth paste (optional)
Pinch of salt & pepper
Ground chilli to taste
1/2 cup of finely chopped dill
method
Grate zucchini and remove any excess moisture using a paper towel or muslin cloth
Finely chop dill (or fresh herbs of choice)
Lightly whisk eggs in a separate bowl
Combine all ingredients into a large mixing bowl
Pre heat fry pan to a medium-high heat
Add mixture to pan in desired sized fritters (avoid making too large/ thick, to ensure they hold together)
Cook for 4-5 minutes each side (size dependant), until golden brown
Enjoy hot or allow to cool
Refrigerate in an air tight glass container for up to 3 days
