Zucchini fritters

Made ahead of time, these zucchini fritters make for a super quick breakfast, lunch or dinner option. With the addition of fresh herbs, these fritters are packed full of flavour and easily customisable.


Ingredients

  • 2 medium zucchini, grated

  • 2 cups of almond meal

  • 4 large free-range eggs

  • 1.5 tbsp minced garlic

  • 1.5 tbsp bone broth paste (optional)

  • Pinch of salt & pepper

  • Ground chilli to taste

  • 1/2 cup of finely chopped dill

method

  1. Grate zucchini and remove any excess moisture using a paper towel or muslin cloth

  2. Finely chop dill (or fresh herbs of choice)

  3. Lightly whisk eggs in a separate bowl

  4. Combine all ingredients into a large mixing bowl

  5. Pre heat fry pan to a medium-high heat

  6. Add mixture to pan in desired sized fritters (avoid making too large/ thick, to ensure they hold together)

  7. Cook for 4-5 minutes each side (size dependant), until golden brown

  8. Enjoy hot or allow to cool

  9. Refrigerate in an air tight glass container for up to 3 days
